I've made mapo eggplant with tofu instead of ground meat with excellent results, so this recipe is an extension of that. Soboro is ground meat cooked with seasonings such as Soy Sauce and sugar. You stir the meat as you cook it, breaking it up to form small pieces or pebbles, giving Soboro its typical appearance and texture.

  1. Finely julienne the ginger. Cut up the tofu into large-ish pieces (it will crumble later anyway so no need to be precise here). Heat some sesme oil in a frying pan and stir fry the ginger and ground meat until the meat changes color..
  2. Add the water, chicken stock granules and the ingredients marked A to the frying pan. Add the tofu and simmer for a while until the flavors have penetrated the tofu. Add the katakuriko dissolved in water, mix gently until thickened and it's done..
  3. Spoon plenty of the mixture over hot rice, scatter with some chopped green onion and it's done..
  4. Variation: mix a raw egg and soy sauce with the rice and spoon the tofu-meat mixture over that. Very satisfying and rich!.

Soboro made from chicken is the most typical dish, but you can also use pork or some kinds of fish to make it. Donburi or Don are rice bowl. Drizzle the peanut sauce over top, then sprinkle sliced green onions and sesame seeds over everything. Once the meat is nearly cooked through, add the sauce and stir until the beef has absorbed the sauce and the pan is mostly dry. Serve over hot rice and top with green onion and egg.
