While I think spring rolls are fairly easy to assemble, you'll want to have all of your fillings chopped and ready to go ahead of time. Ingredients of Falafel Tofu Spring Rolls

  1. You need 10 of Spring roll wrappers.
  2. It's 1 block of Firm tofu.
  3. It's 1 bag of Fresh coriander leaves.
  4. It's 1 clove of Garlic.
  5. Prepare 1 tsp of Cumin powder.
  6. It's 1/2 tsp of Chili pepper.
  7. It's 1/2 tsp of Salt.

  5. Combine the processed ingredients, the spices and salt in a bowl and mix mix..
  6. Taste it once it's been mixed. If you want to eat the spring rolls as-is as a drinking snack, be generous with the salt. If you want to add sauce later, use less salt..
  7. Put about 1 tablespoon of the filling on a spring roll wrapper..
  8. Wrap the spring roll up, following the instructions on the packet..
  9. Add 1 tablespoon of olive oil (not listed in the ingredients) to a cold frying pan, then turn on the heat..
  10. Put the spring rolls in, and cook over medium heat for a few minutes..
  11. Cook on both sides until golden brown..
  12. Serve with a side salad!.

  14. They have a rather dry texture when eaten on their own, so add some salsa Mexicana, ketchup, tomato sauce, sesame sauce etc. to make them even tastier!.

You can also double up this recipe and serve it for a party. I wanted these spring rolls to be vegetarian and light, so I swapped the shrimp for tofu and added more vegetables. Real talk: spring rolls are a pain. You prep vegetables, cook fillings, make a sauce, soften the wrappers, and then, after all that, you have to stand over the counter for forever rolling the slippery little buggers around ingredients that want to spray everywhere.
