Karen's Kimchi Tofu Soup. Green onion, hot pepper paste, kimchi, pork, pork belly, sugar, tofu, water. Go bold or go home with this Korean Tofu Stew with silken tofu, sliced meat and kimchi. This warming and comforting jjigae (Korean stew) is made with extra soft tofu (soondubu), thinly sliced meat, kimchi and anchovy broth.

I used water as I forgot to pick up broth and it was still great. I added an egg yolk and sprinkled it with a little furikake to add flavor lost from the broth. This Korean kimchi soft tofu soup has a fiery broth that infuses custardy tofu with deep flavors and spices. You can cook Karen's Kimchi Tofu Soup using 6 ingredients and 8 steps. Ingredients of Karen's Kimchi Tofu Soup

  1. Prepare 2 lb of Pork bone.
  2. It's 3 cup of Coarsely chopped kimchi.
  3. Prepare 2 tbsp of Korean chili paste.
  4. It's 2 box of Silken tofu.
  5. You need 3 of Eggs.
  6. You need 1 of as needed Salt.

  1. Boil half a pot of water, add pork bone. Boil for 10 mins..
  2. Pour out gross green/gray stock. Wash and rinse bones in pot. Fill pot up with water again, put on medium-low heat to boil..
  3. Add a dash of salt..
  4. Boil for 1-2 hours, depending on how much time you have..
  5. Add coarsely chopped kimchi to pot. Boil for 30 mins..
  6. Add chili paste and vegetable seasoning. Spoon in silken tofu in large chunks..
  7. Crack in eggs, stir to break up eggs and mix well! Don't want large chunks of eggs in your soup..
  8. Add salt to taste. If too salty, dilute with water..

I eat it alongside rice, and find it so luscious and warming that it's become a wintertime staple. Add ground pork and cook, breaking up clumps, until no longer pink. Add garlic and ginger and stir until fragrant. Add kimchi and cook for a few. The Korean Tofu Soup is packed full of flavour with Kimchi, garlic spices and silky soft tofu.
