It wears many hats and it's oh-so delicious and Thai-inspired. Once your tofu is marinated, it's ready for a quick stir fry to give it that perfectly golden brown, crisp, mega-flavorful coating. Stir-fry them on high heat with high-heat oil (oil is optional, as I don't use oil). I prefer mine with just veggies.

Vegan Thai Peanut Tofu Stir Fry step by step

  1. Heat coconut oil in a large pan, and sautee the green onion, garlic, mushrooms, sundried tomatoes..
  2. After a couple minutes add basil, coconut flakes, and cashews..
  3. Add tofu, sauce, a bit of water, and curry and let simmer until flavours are fully absorbed by the tofu..

I'm not a huge tofu fan in this recipe. It would be okay, as long as you are able to fry some texture on the tofu first. Also, tofu is bland, and would need additional flavour. Then just fry the tofu with a small amount of oil, which makes the outside crisp and slightly caramelised, whilst the inside remained beautifully tender. Mix together the ingredients for Thai Peanut Sauce.
