It's a delicious vegan chili that everyone raves about! I love sitting down to a big bowl of hearty vegetarian chili on a cool evening. In a large pot over medium heat, heat olive oil then add onion, bell pepper, and carrots. Add water, beans, and tomatoes; bring to a boil.
